Chef Javier Ponte began his culinary career 35 years ago. His passion for cooking led to his studies in French cuisine at a prestigious culinary school in Brussels. After various apprenticeship work in well known Brussels restaurants. Chef Ponte and his Brother founded “La Cueva de Castilla”, a Spanish restaurant in Brussels, which quickly became a reference in the Michelin Guide and Gault Millau among others. Having Andalucían heritage on his Father’s side, and discovering Marbella over 12 years ago, Chef Ponte decided that Marbella was the ideal location to create his urban city garden restaurant PAELLA’S Y MÁS offering soul satisfying Spanish cuisine cultivated in tradition and passion. The restaurant with its spacious, modern and contemporary warm Andalucían design and atmosphere offers a wide range of delicious Spanish rices, Fideua (thin Spanish pasta), Iberian Bellota steaks, cured ham, sausages, seafood and salads. PAELLAS Y MAS is a place for everyone; from a casual afternoon beer and warm Andalucían sandwich to a dinner for two or more. Chef Ponte welcomes you to enjoy his heart felt cooking which combines traditional family recipes and local Spanish ingredients for creating innovative and delicious cuisine.

Chef Javier inherited his family’s passion for good cooking from his Mother and Grandmother; with this as a base and fine Spanish ingredients, he then adds his own artistic creativity to each recipe for coming up with innovative paella and fideua dishes to please even the most discerning appetites. Combining seasonal and natural ingredients offer a mix of flavours that will ensure your lunch or dinner is a unique, enjoyable and repeatable experience.
